At age 4 I signed my first contract with my mother to pack away my spaceship in the lounge room every day and from that day forwards I have always loved finding win win situations. After studying law, commerce and hospitality, I spent the next twenty years working at leading five star resorts, boutique retreats and city hotels throughout Australia and New Zealand. I believe that the difference in a good experience and an amazing one comes down to the people you interact with and the fine details.
Jin began his culinary journey in Korea before starting a new life here in Australia. Over the past ten years Jin has worked at some of the best restaurants in the country as Sous Chef including The Bridge Room, Magill Estate and Momofuku Seibo. All three restaurants were awarded 3 Hats and rank in the top 15 restaurants in the country in the Gourmet Traveller Top 100. He was also invited to work at Noma Australia’s Sydney pop-up.
Originally from Adelaide, Simone worked at Hayman Island Resort before moving to Sydney where she focussed on developing her fine dining skills at the 3 hatted Rockpool. Simone soon became a senior headwaiter and went on to be a part of the opening team at Rockpool Bar and Grill in a similar position. She then moved on to Sydney icon Grounds of Alexandria before returning to fine dining at 3 Hat Quay Restaurant and Botanic Gardens Restaurant.
Assistant Restaurant Manager
Giada Sanna comes from Sardinia, Italy. She has been working in hospitality for 15 years including 4 and 5 stars hotels and resorts in different parts of Italy. In 2015 she moved to Sydney working in some of Sydney’s top end dining rooms including Pei Modern and Rockpool Bar and Grill. She has a genuine approach to hospitality, bringing sunshine and happiness to the team and her customers.
Assistant Restaurant Manager & Sommelier
Luca Abbatiello is originally from a small village near Napoli in the south of Italy. Starting his career in luxury hotel ``Hotel Martone`` and Michelin star ``La Scalinatella``, he went on to work at a number of Michelin Star venues including Gordon Ramsay Restaurant Royal Hospital Rd and Alyn Williams at the Westbury Hotel prior to relocating to Adelaide.
Simone has an impressive career to date including master bartender and senior bartender roles at some of Sydney's and Italy's best cocktail bars. Simone's vision is to recreate unique and original cocktails following the seasons and taking inspiration from flavours with no barriers. Working with liquid nitrogen, dry ice, fire and smoke, he extracts the flavours that he wants to let customers experience astonishing visual and tasting journeys.

With her bubbly personality and over 19 years experience in 5 star hotels, Michelle knows what it takes to create an exceptional, flawless experience for her wedding couples. And her love for communication and perfection will leave you relaxed and rest assured, that your day will be the day of your dreams.
Fenella's positive, can-do attitude makes you feel at ease that everything will go to plan. Nothing is too hard for our enthusiastic, joyful Kiwi. Fenella loves being part of our couple's day and has made it her trademark to exceed everyone's expectations.
Conference & Functions Manager
Having grown up in a family that knew how to throw an impromptu party, Amanda was always drawn to a career in hospitality. Before she joined us at Mount Lofty House she worked in the wine industry in supply and even brokered wine. Amanda's experience, her creativity and her life long love for vibrant and stimulating gatherings allow her to see your vision and help you achieve your goals.
Conference & Functions Coordinator
I believe that being organised is the key to success, in fact I get a lot of satisfaction about organizing everything in my life. That is why my position as Conference & Functions Coordinator, where I am continuously organising successful events, gives me so much joy. After working in many areas of business I fell in love with the buzz and excitement of event management and I want my guests feel the same excitement and buzz that I feel every single time.
I grew up in India and spent half a lifetime cooking through the Middle East, New Zealand and various regions of Australia. After having some interesting experiences working at the Burj al Arab in Dubai, a luxury exclusive boutique lodge patronised by royalty in NZ, Marriott in Melbourne and most recently MONA in Tasmania, it is hard to buttonhole my style of food. It is influenced by all the different ethnicities of chefs that I have had the privilege of working with and the knowledge of some really passionate foodie amateurs that I have had the honour of learning from.
Having gained experience in some of the top spas both internationally and back here in Australia, we are very happy to have Denae leading the guest experience at Stables Day Spa. As she says… ‘Nothing compares to the feeling of seeing clients enjoy the blissful experience of their own nurturing journey’ and with her warm, nurturing personality she creates just that.
